In a large bowl combine the lemon juice and sea salt. Add the red cabbage and carrot and toss to coat the vegetables well.
Place a weighted plate on the bowl to "press" the slaw. Allow the cabbage mixture to marinate in the refrigerator for at least an hour. Stir in parsley just before serving.
