4 tablespoons Lemon juice
3/4 teaspoon Sea salt
1 1/2 pounds thinly sliced Red cabbage
1 large grated Carrot
1/3 cup finely chopped Fresh parsley

Note: Allow the cabbage mixture to marinate in the refrigerator for at least an hour before serving.

In a large bowl combine the lemon juice and sea salt. Add the red cabbage and carrot and toss to coat the vegetables well.

Place a weighted plate on the bowl to "press" the slaw. Allow the cabbage mixture to marinate in the refrigerator for at least an hour. Stir in parsley just before serving.
